Cooking Elderflower Cordial, with Walter White…

… At least that’s what it felt like after trying four different chemists for citric acid and being met by some quizzical looks before being told they’re all out. Finally one chemist informed me of its other use – that druggies use it to mix drugs! Well that explained a lot to naive little me! I thus decided that it wasn’t necessary and that I’d also avoid bulk buying it off the internet.

  
Pip helped me gather the Elderflowers from our hedge (while Bee was strapped into her highchair outside, with food to occupy her. She’s a menace at the moment!). We were lucky to get enough being so late in the season, but we managed to fill the cauldron. 

  

I used a mix of recipes, and also just what I thought seamed right, and ended up with this…

1.5l water

1kg caster sugar

Gently heat until sugar is dissolved then bring to boil and take off the heat.


Then add..,

Zest and juice of 4 lemons

~ 30 Elderflower heads of various sizes!

Stir in, cover, and leave for 24 hours.

  
So now we wait! Hopefully it’s not a disaster!
